Custard Sponge

Ingredients

Custard Sponge

  • 4 Eggs, separated, at room temperature
  • pinch salt
  • 170 grams caster sugar
  • 2 tablespoons cold water
  • 30 grams plain flour
  • 120 grams Nurses Full Cream Custard Powder
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon bicarbonate of soda
  • 300 grams whipping cream
  • jam or lemon butter, to fill
  • chocolate curls, to decorate

Recipe's preparation

    Custard Sponge
  1. Pre - heat oven to 180 oC

    Grease 2 x 20 cm sponge tins and line bases with Glad Bake

    Insert Butterfly and place egg whites and salt in TM bowl. Beat the egg whites for 3-5 minutes on speed 4 until stiff

    Add sugar and beat for a further 1 minute on speed 1.5

    Add egg yolks and cold water and mix for 1 minute on speed 1.5

    Remove Butterfly and gradually add flour, custard powder, cream of tartar and bicarbonate of soda, incorporate with aid of spatula on speed 1.5

    Pour evenly into 2 sponge tins and cook for approximately 25 minutes or a skewer inserted comes out clean

    Decorate sponges seperately or place two sponges together when completely cold

    Either split sponges and fill with lemon butter or strawberry jam and whipped cream, spread whipped cream over top of sponges and grate chocolate curls on top to decorate. Or just spread top of sponge with lemon butter or jam, top with whipped cream and chocolate curls. Freshly cut strawberries are also nice when in season.

  • I didn't incorporate the mix

    I didn't incorporate the mix well enough with the spatula so the custard powder was hard in places in the cake. Will try again though.
