Danielle's Pumpkin Scones

Scones

  • 250 grams pumpkin, Skinned and diced
  • 2cups Self Raising Flour
  • 1 egg yolk
  • Half cup caster sugar
  • 1 tablespoon Butter

Recipe's preparation

  1. Roast pumpkin pieces in oven at 220 degrees until soft. About 30 minutes
  2. mash pumpkin in thermomix 5seconds speed 7. Allow to cool
  3. add all ingredients - knead 2 mins locked lid.
  4. roll out on floured surface and cut rounds about 1.5cm thick
  5. Bake 180 degrees 15 mins or until sounds hollow when tapped

Tip

Dough is very sticky. Sometimes I have to add another half cup of flour, depends I think on the pumpkin type. I put a lot of flour in my board. Work with very sticky fingers then wet them after I have rolled or flattened out the dough to scape it all off my fingers.
