Dark Chocolate, Buckwheat and Pear Loaf

  • 130 grams coconut milk
  • 3/4 teaspoon lemon juice
  • 3 large eggs
  • 65 grams olive oil
  • 1/2 teaspoon vanilla extract
  • 65 grams dark chocolate, roughly chopped
  • 65 grams Coconut sugar
  • 35 grams almond meal
  • 50 grams buckwheat flour
  • 50 grams Coconut Flour
  • 1 teaspoon gluten-free baking powder

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place the pear halves in the TM bowl and chop 5 seconds at speed 5.

  2. Add 2 tablespoons of water to the pear and cook at 98 degrees, speed 2 for 10 minutes.

  3. Puree the cooked pears for 1 minute, beginning at speed 1 and moving up gradually to speed 9. Set pureed pear aside.

  4. Combine the coconut milk and lemon juice in the TM bowl, mixing briefly at speed 2.  Leave stand for 5 minutes.

  5. Add eggs, olive oil, vanilla extract and 375g of the pear puree and mix for 5 seconds at speed 5.

  6. Add the remaining ingredients and mix Counter-clockwise operation 20 seconds at speed 3.

  7. Pour mixture into a loaf tin that has been lined with baking paper and bake in a preheated over at 190 degrees for 60 minutes, or until a skewer comes out clean.

Extra pureed pear is delicious stirred through homemade yoghurt.
