- 60 g raw sugar
- 1 tsp bicarbonate of soda

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Turn oven on at 180°C. Grease mini muffin tins.
- Place Weetbix and pitted dates into bowl. Chop Speed 6 for 5 seconds.
- Add butter, raw sugar, bicarbonate of soda and vanilla. Pour over boiling water.
"Gentle stir setting" for 3 mins. Butter should be melted and the mixture combined. - Add egg and self-raising flour. "Counter-clockwise operation" speed 4 for 10 seconds.
Mixture should be combined. - Place mixture into mini muffin tins and bake for 15 mins.
Leave to cool in tins for 10 minutes before removing.

Very nice, easy to make, moist & tasty muffins. I made 12 full sized muffins and cooked for 20 minutes. Substituted 40 g flour with LSA and worked out well. Thank you for the recipe.
