  • 225 grams Puff Pastry (bought or Home-made), I use frozen ready rolled
  • 50 grams Butter
  • 75 grams currants
  • 1 teaspoon Mixed spice (ground)
  • 25 grams brown sugar
  • Milk or lightly beaten egg white
  • A little granulated sugar

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Pre-heat the Oven to 230 degrees C


    Roll out the pastry thinly on a floured surface, if not using ready made sheets. Cut our 8 x 10cm rounds.

    Place butter in mixing bowl and melt 50-60 sec/50 degrees C/Speed 4.

    Add Currants, spices and soft brown sugar, stir Gentle stir settingCounter-clockwise operation/5-10 secs. Place generous spoonfuls in the centre of each round of pastry.

    Dampen the edge of the pastry,draw up into the centre, like a parcel to enclose the filling and seal well.

    Turn over and flatten very lighthtly with a rolling pin.

    With a knife, make 3 'slashes' across the top of each cake, brush with milk or egg white and sprinkle with granulated sugar.

    Place on a greased baking sheet and bake for 15 minutes or until golden. Serve warm or cold. Delicious served with butter on the top!

Tip: Once you have tried them, 8 will not be enough!

These little treats named after the English, Lancashire town 'Eccles' are believed to date back to medieval days, and they were originally served at religious festivals - the three 'slashes' being said to represent the Holy Trinity

    These old fashioned Eccles cakes are easy to make and so delicious. Made 8 last night, all eaten now so have just made another 8 - hope they last a little longer than the first lot!!

    I have fond memories of eating these and always have them on my list of things to eat when I go back to the UK. Never  thought to make them, delicious.
