Egg+Dairy+Sugar Free Spelt Banana Bread

  • 150 grams wholemeal spelt grain, (meal whole grains on thermomix to make flour)
  • 2 tablespoon whole flaxseeds
  • 3 Large ripe banana
  • 20 grams coconut oil
  • 200 grams Raw Date Syrup, (See my other recipe for that)
  • 1 teaspoon vanilla extract
  • 30 grams Desiccated Coconut
  • 1 teaspoon ground cinnamon
  • 1 1/2 teaspoon bicarb soda
  • 1 pinch salt
  • 40 grams Oats rolled
  • 20 grams walnuts

Recipe's preparation

    EGG, DAIRY AND SUGAR FREE SPELT BANANA BREAD
  1. 1.

    Preheat oven to 180C

     

    2. Mill spelt grains 40 seconds, speed 9. Reserve.  

     

    3.Place flaxseeds in the bowl and mill 40 seconds, speed 9. Place in a small container and add six table spoons of water. Mix it well and wait unti mixture is thick and creamy like an egg. Reserve.  

     

    3. Add chopped up bananas, coconut oil, date syrup and vanilla to thermomix bowl and mix 30 Seconds Speed 4. Scrape down the side of the bowl.

     

    4. Add reserved spelt flour, reserved flaxseed mixture, desicated coconut, cinnamon, bicarb soda, salt, oats and walnuts, mix for 30 Seconds, Counter-clockwise operation Speed 4 (or until combined).

    Pour into oiled loaf pan and bake for 45 minutes at 180C (or until skewer comes out clean).
