Recipe's preparation

    Sweet Brioche Dough
  1. Insert your Butterfly into the mixing bowl.

    Add your Aquafaba, Sugar and Salt to the mixing bowl.

    Mix for 5 minutes, speed 3.5, the consistency, should be now white, and meringue like.

    Transfer mixture to another bowl.

    Without washing the bowl, add the milk, and yeast into the bowl and heat for 3 minutes, 37 degrees speed 1.

    Now add the flour and the reserved aquafaba mixture.

    Using the Dough feature, knead the dough for 5 minutes/

    Once finished, transfer to an oiled bowl, or wrap in a Thermomat and keep in a warm place until the dough has doubled in side.

    Once it has doubled, you can use this in any sweet Boiche dough recipe you like. Brush the finished dough with milk alone as a glaze.

    General bake time will be in a 180 degree pre heated oven for approximately 20-25 minutes
