Fruit choc chop muffins

Ingredients

muffin mix

  • 100 g coconut oil
  • 250 g buttermilk
  • 1 egg
  • 1 tsp vanilla extract
  • 2 ripe bananas, replace with 100g fruit, berries, mango, strawberries
  • 300 g Self Raising Flour
  • 100 g caster sugar, raw sugar milled
  • 1/2 tsp salt
  • 80 g white and chocolate chips

Recipe's preparation

  1. Mill Raw sugar till becomes caster Sugar - 10sec, Speed 5

    Add coconut oil and melt for 2 min, 60 degrees at Speed 2 till sugar is dissolved.

    Add Buttermilk (made by myself), egg, vanilla and bananas to oil.

    Mix 4 Sec, Speed 5 till bananas are mixed.

    Add dry ingredients except choc chips to wet mix and mix 30 sec, speed 4-5.

    Add choc chips mix 10-15 seconds on reverse speed Gentle stir setting

    Spray mini muffin trays or large trays, I use silicone as they pop straight out. fill the cups 3/4 way and bake for 20min till they spring back on 180 degrees. Cooking time will vary depending on the oven mine takes no time but I do need to turn them half way as it is not fan forced.

Tip

You can use regular full cream milk as well, cooking time is less.

Coconut oil can be swapped to butter.

I use buttermilk and coconut oil to make them nice and moist, nothing worse then a dry muffin.

    These are really nice worked well with raspberries instead of blackberries, everyone loved them tmrc_emoticons.)
