Gluten free carrot cake cookie
- 150 g almonds
- 80 g carrot, cut in chunks
- 50 g walnuts
- 50 g Shredded coconut
- 1 egg
- 75 g sultanas
- 1 tsp baking powder
- 80 g sugar
- 65 g oil, canola or vegetable
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1 pinches Nutmeg

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- 1. Grind almonds to meal: 20 sec / sp 9. Remove from bowl.
2. Chop carrot chunks: 5 sec / sp 5. Remove from bowl.
3. Chop walnuts: 3 sec / sp 6. - 4. Put everything from preparations back into the bowl and add everything else. Mix 30 sec / sp 4.
- 5. Preheat oven to 175°C (or 155 °C fan forced).
6. Use a tablespoon to make 20 cookies on a baking tray (greased or lined with baking paper).
7. Bake for 15-17 min.
8. Remove from tray and allow to cool (slightly) before serving.

This is the TMX version of Tina Haupert's recipe on https://www.health.com/food/try-this-recipe-for-gluten-free-carrot-cake-cookies. Initially, I replaced the honey with 100g sugar, but that was too sweet. Please adjust to your own taste.

Very easy to make, turned out exactly as I expected. I made bigger cookies though - so instead of 20, it made 12. I extended the cooking time by 3 mins to account for the change in size. So 20 mins instead of 17.
