Gluten Free Cornflake Bikkies

Ingredients

25 g

Cookie Dough

  • 100 grams brown sugar
  • 180 grams Butter, At room temperature
  • 2 eggs
  • 250 grams Plain gluten free flour
  • 10 grams Gluten Free Baking Powder
  • 70 grams Gluten free Cornflakes
  • 70 grams crushed cashews
  • 70 grams sultanas
  • 70 grams Extra gluten free cornflakes, To roll in
  • 10 g Almond milk, To Splash on

Recipe's preparation

    To Make Dough
  1. Pre-heat fan forced oven to 140 degrees. Line baking tray with paper.

    Add Sugar and Mill for 4 seconds on speed 9

    Add softened butter and mix for 10 seconds on speed 5, then add in the eggs and mix for 20 seconds on speed 5.

    Add flour and baking powder and mix for 20 seconds on speed 5

    Add Crushed cashes and sultanas and mix for 10 seconds speed 4

    Remove dough from TM bowl and tip into another bowl to incorporate the Cornflakes & splash of almond milk gently by hand.

    Roll dough into balls and then roll in the extra cornflakes and place on a baking tray, (you can make them as big as you like) - they will spread out slightly on the tray.

    Bake for 25 minutes, allow to cool on the tray before moving them.
