gluten free gingerbread dough
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves
- 2 heaped tablespoons golden syrup
- 125 grams Butter
- 100 grams brown sugar
- 1 teaspoon vanilla essence
- 2 eggs
- 300 grams Gluten free plain flour
- 2 teaspoons xanthan gum
- 1/2 teaspoon baking powder (GF)

Recipe's preparation
Preheat oven to 160 degrees fan forced. Place paper on 2 baking trays.
Put spices, golden syrup, butter, brown sugar and vanilla into TM bowl and heat 9 min/100/speed 2.
Cool in TM bowl ( be patient) then add eggs and mix 6 secs/ speed 3.
Add flour, xanthan gum and baking powder and mix until combined 5 secs/speed 5. Scrape down sides and repeat.
Knead 2 min/"Closed lid" /"Dough mode" . Tip out dough ( it will be lovely and firm ready to use) and roll out between 2 pieces of non-stick baking paper to 1/2 to 1cm thickness( depending on size you want) and cut out shapes with biscuit cutter.
Place onto the prepared trays and bake in oven for approx 15 -20 mins minutes depending if you want it soft or a bit crunchy depending on thickness. When just starts to brown they are done. Cool and decorate as desired. Makes about 25 medium size gingerbread men.

Thank you for the feedback about adding more flour. I have made a few batches of gingerbread and the flour weight has been fine but I am about to make some for Christmas so I will double check the flour and update the recipe if it needs more. At least it's easy to add flour and give it a mix if it is not a firm dough.
edit. Just made a batch and used 310 g of flour as that was how much I had in the packet and it was perfect. I used a different brand of flour than I did previously and it still worked.

I made a gingerbread house
I made a gingerbread house with this recipe last christmas and it worked well. I printed some templates off google somewhere (sorry can't remember where but it was easy to find). I didn't double the recipe so it wasnt very thick but I was very gentle with it and you can always use fondant and lollies to cover any breakage. I watched some you tube videos of assembling prepackaged gingerbread houses and they were great help with my construction techniques.

This recipe was great. I added more flour as it was a little runny, co probably added another cup. They turned out great. Lovely balance of spices. I've saved it to my recipes for use again.
