  • 2 eggs
  • 50 g Butter
  • 140 g Powdered Dextrose
  • 140 g gluten free flour
  • 3 tablespoon potato starch
  • 3 tablespoon Tapioca/ Arrowroot Flour
  • 1 teaspoon Ground cinnamon (optional)
  • 1 teaspoon baking powder
  • 1/2 teaspoon Bi-carb soda

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat Oven to 150 degrees celsius (180 degrees celsius if using sugar)

     

  2. Lightly grease a loaf pan (roughly 10 x 20 cm)

  3. Place bananas into TM bowl Closed lid, place MC in lid and lid on and mix on speed four for ten seconds. 

  4. Add remaining ingredients to TM bowl Closed lid place MC in lid and place lid on bowl. Mix on speed four reverse Counter-clockwise operationfor ten seconds 

  5. Scrape down sides of bowl Closed lid pllace MC in lid and place lid on bowl. Mix on speed four reverse Counter-clockwise operation for another 10 seconds.

  6. Pour ingredients into prepared loaf tin and place in oven for 60-65 minutes (35-40 minutes if using sugar).

  7. Check with a skewer/ knife to see if cooked. If comes out clean loaf is cooked, if not put back in oven for 5-10 minute intervals until cooked.

  8. Cool and slice

Tip

You can replace the powdered dextrose with 1/2 cup of sugar however won't be low fructose.
