Healthy lunchbox muffins

Ingredients

12 portion(s)

  • 2 green apples, Peeled, cored & quartered
  • 1 zucchini, Peeled & roughly chopped
  • 2 eggs
  • 100 g vegetable oil
  • 1 tsp vanilla extract
  • 250 g Self Raising Flour
  • 80 g brown sugar
  • 1 tsp cinnamon

Recipe's preparation

  1. Preheat fan forced oven to 160 degrees. Line a 12 cup muffin tin with cupcake cases. 

  2. Add apples and zucchini to TM bowl. Grate for 3 seconds/speed 7. Scrape down sides of bowl & repeat (3sec/sp7). 

  3. Add eggs, oil & vanilla. Mix for 10 seconds/Speed 4. 

  4. Add flour, sugar & cinnamon. Mix on Counter-clockwise operation/ Speed 3 until just combined. Do not over mix or muffins will be tough. 

  5. Divide mixture evenly among 12 muffin cases and bake for 20-25 minutes or until a skewer inserted into muffin comes out clean.

Tip

    Awesome muffins thank you! 5yo loves them. I reduced sugar to 60g and still very tasty.
    After freezing them and thawing again I reckon they were even moister than when fresh!Smile

    The kids LOVED them. I don't bother peeling the zucchini or apple - more fibre and you don't taste it. On kids request I put chunks of apple into the second batch. So good!

    Delicious. Made in mini muffin cases with a little less sugar and they were great. I did have trouble getting them out of muffin cases tho.. Miss 2 enjoyed them, great to have vege in them ( and didn't bother to peel apples!) too easy! Thank you

    Make these all the time for my fussy milk protein allergic 3 year old little man. Unbeknownst to him I pack all sorts of fruit and veg into them (depending on what's in the fridge). Also love the fact that they are dairy free. I've even been known to leave the sugar out all together and add a little honey and everyone's still happy to eat them.

    Thank you very much my son loves them tmrc_emoticons.) my son is on a special diet and is fussy. I swapped the oil for butter, I put half xylitol sugar and half coconut sugar. We had no zucchini so I put a carrot in and a banana. I also added 2 Tbs linseed meal and 2 of psyllium husk. Thanks again I have only had my thermo for a week but this will be a regular recipe in our house xo.

    Loved them ! After reading everyones comments I reduced the sugar a little and used olive oil and reduced that too tmrc_emoticons.) Only had apple and carrots but they are really yummy tmrc_emoticons.) Thanks !

    I substituted the vegetable oil for coconut oil and the brown sugar for coconut sugar. Flavour was nice however they were a bit too moist so will reduce oil amount next time. Kids gobbled them up no probs!

    I would love to call these muffins healthy, cause they look great and muffins are always a great lunchbox item, except using vegetable oil makes them rather toxic. This oil is highly processed, refined and should never be consumed. How about Coconut oil or Plain 'ol Butter instead? I also wouldn't use brown sugar, rather a real not refined "brown" sugar like Rapadura sugar or just no sugar at all, add a Banana instead. The 2 Apples probably even gives it enough sweetness anyway.

    These are great to freeze then pop in lunch boxes through the week! I substitute oil with 75g olive oil & 25g apple juice. Also sometimes use half can sliced apples instead of fresh if I don't have any fresh apples.  My boys don't even know they're eating zucchini tmrc_emoticons.)
