Recipe's preparation
Preheat fan forced oven to 160 degrees. Line a 12 cup muffin tin with cupcake cases.
Add apples and zucchini to TM bowl. Grate for 3 seconds/speed 7. Scrape down sides of bowl & repeat (3sec/sp7).
Add eggs, oil & vanilla. Mix for 10 seconds/Speed 4.
Add flour, sugar & cinnamon. Mix on "Counter-clockwise operation" / Speed 3 until just combined. Do not over mix or muffins will be tough.
Divide mixture evenly among 12 muffin cases and bake for 20-25 minutes or until a skewer inserted into muffin comes out clean.

Make these all the time for my fussy milk protein allergic 3 year old little man. Unbeknownst to him I pack all sorts of fruit and veg into them (depending on what's in the fridge). Also love the fact that they are dairy free. I've even been known to leave the sugar out all together and add a little honey and everyone's still happy to eat them.

Thank you very much my son loves them my son is on a special diet and is fussy. I swapped the oil for butter, I put half xylitol sugar and half coconut sugar. We had no zucchini so I put a carrot in and a banana. I also added 2 Tbs linseed meal and 2 of psyllium husk. Thanks again I have only had my thermo for a week but this will be a regular recipe in our house xo.

Great muffin recipe. I used Fuji apples and 50g of coconut oil instead of vegetable and rapadura instead of brown sugar. True test will be when they get packed in the kids lunchboxes tomorrow morning, but my husband and I both enjoyed them tonight with a cup of tea

I substituted the vegetable
I substituted the vegetable oil for coconut oil and the brown sugar for coconut sugar. Flavour was nice however they were a bit too moist so will reduce oil amount next time. Kids gobbled them up no probs!

I would love to call these
I would love to call these muffins healthy, cause they look great and muffins are always a great lunchbox item, except using vegetable oil makes them rather toxic. This oil is highly processed, refined and should never be consumed. How about Coconut oil or Plain 'ol Butter instead? I also wouldn't use brown sugar, rather a real not refined "brown" sugar like Rapadura sugar or just no sugar at all, add a Banana instead. The 2 Apples probably even gives it enough sweetness anyway.

These are great to freeze then pop in lunch boxes through the week! I substitute oil with 75g olive oil & 25g apple juice. Also sometimes use half can sliced apples instead of fresh if I don't have any fresh apples. My boys don't even know they're eating zucchini
