Healthy Peanut Butter Chocolate Chip Cookies

Ingredients

Cookie Dough

  • 1 1/4 cups --- Chickpeas, Rinsed and dried
  • 2 teaspoons vanilla extract or bean paste
  • 1/2 cup 2 tablespoons Peanut Butter
  • 1/4 cup honey
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 1/2 cup chocolate chips

Recipe's preparation

  1. Preheat oven to 180 degrees.

    Add all ingredients except chocolate chips to the bowl. Mix on speed 5 for 10 seconds. Scrape down bowl and repeat.

    Add chocolate chips and mix on speed 5 Counter-clockwise operation for 10 seconds.

    Roll mixture into balls and flatten onto a lined baking tray. Bake for 15 minutes or until slightly brown. This mixture is not meant to go hard, they are quite delicate. 

    Allow to cool and then refrigerate. Keep cookies in the fridge in an airtight container

    Hi - this looks nice. Can I ask how 'dry' the chickpeas need to be? I assume you're starting with tinned ones, then rinse, but do you dry them out in a dehydrator/oven or do you just pat dry?
