Healthy Version Red Velvet Chocolate Mud Cake
- 1/2 cup Wholemeal S.R flour
- 2 tbs Organic coconut flour
- 1 tbs Organic coconut oil
- 1 Raw beetroot
- 1/4 cup 100% Pure maple syrup
- 2 tbs Cacao or cocoa powder
- 2 tbs dark chocolate chips
- 3/4 cup Milk of choice
Icing
- 8 squares 70% cacao or cocoa dark chocolate
- 1/2 tsp Organic coconut oil

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- *Peel & Place beetroot in "Closed lid" Speed 6 - 5 sec scrape sides and repeat
*Melt coconut oil in microwave and add to "Closed lid"
* Add all remaining ingredients to "Closed lid" speed 4 - 5 seconds
* Eventually spread batter into baking tin
* Bake at 180c for 15-20 min until cake is firm and skewer come out clean - * Melt dark chocolate and coconut oil in microwave, stir every 45 seconds until smooth
* Spread over cooled cake

Fail is how I would discribe this cake recipe....
Fail is how I would discribe this cake recipe. There is no tin size recommendations so I used a 24cm round tin and my cake was about 1cm thick. I new it wasn’t going to be right when I put the cake mix in the tin before I cooked it but then it barely raised either. Can I recommend an edit on the instructions as it would also be good to fine tune a few bits e.g. first step oven temp, also list ingredients in order of use. End result is that it was still edible but couldn’t take it to my planned event.
