Heavenly Apple & Walnut Crunch

Ingredients

Pastry

  • 100 g raw sugar
  • 120 g Butter
  • 1 tsp vanilla essence
  • 2 egg yolks
  • 300 g bakers flour
  • 3 tbsp iced water

Filling

  • 5-6 apples, Peeled, cored and cut into even blocks
  • 3 tsp ground cinnamon
  • 2 tsp mixed spice
  • 50 g Butter
  • 100 g walnuts, Chopped

Crunchy Crumble Topping

  • 200 g corn flakes
  • 200 g oats
  • 100 g Bran
  • 20 g dried apricots
  • 20 g raisins
  • 50 g brown sugar
  • 125 g Butter

Recipe's preparation

    Pastry
  1. Mill sugar 10 secs/speed 9

    Add butter, vanilla and egg yolks and mix 3 min/speed 4

    Add flour & water and mix 2 sec/speed 7, then Dough mode for 1 min Closed lid

    Wrap dough in ThermoMat and refrigerate for 30 mins

  2. Now, using your hands, gently press the pastry into each tartlet case to line the base and sides. Metal tart tins are best for baking pastry because they conduct and hold heat well. 

    Blind bake at 180 degrees for about 10 mins or until lightly golden.

  3. Filling
  4. Place the apple into the mixing bowl and chop for 2 sec/speed 5

    Place 500g of water into the mixing bowl, place the apples into the Varoma dish and steam for 12-15 min/Varoma/speed 2

    Once soft, remove the water out the mixing bowl, pour in the apples and add the rest of the ingredients.

    Combine 3 secs/speed 5, set aside to cool.

  5. Crunch Crumble Topping
  6. Place all ingredients into the mixing bowl. Mix 10 secs/speed 6


    Fill your prepared tartlet cases with your apple mixture and sprinkle with crunchy crumble topping. Bake at 180C for 25mins or until pastry is cooked through and crumble is crunchy and golden brown.

Tip

This is one of my favourite South African recipes converted for the Thermomix.

 

It's really important that your pastry is refridgerated for as long as possible. As I finish putting the dough into the tartlet cases, I put them back into the fridge for an additional few minutes ito keep them cool before I begin baking.

 

Delicious with a blob of freshly whipped cream or vanilla ice-cream. Can be eaten hot or cold.
