Ingredients

  • 160 grams Butter
  • 210 grams raw sugar
  • 40 grams honey
  • 1 egg
  • 280 grams plain flour
  • 2 teaspoons baking soda, sifted
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • 45 grams dessicated coconut

Recipe's preparation

  1. Turn on oven to 180 degrees, fan-forced.  Place flour, ginger, cinnamon, cloves, coconut, and baking soda in TM bowl and mix for 10 seconds, sp 3.  Set aside

  2. Place raw sugar into TM bowl and mill for 3 seconds, sp 9

  3. Add butter and honey to sugar and mix for 20 seconds, sp 6.  Scrape down side of bowl and mix again for 20 seconds, sp 6

  4. Add egg and beat on sp 3 while gradually adding flour and spice mixture.  Then mix Closed lid, for 30 seconds, Dough mode

  5. Roll a teaspoon of mixture into a ball and flatten onto a greased baking tray (with edges).  Repeat with the rest of the mixture to make 4 x 4 rows on 2 trays.  (Note mixture will spread to double its width while baking, hence making the unique square shaped cookies)

  6. Bake in oven for 8 minutes until cookies on top tray are a lovely golden caramel colour.  Remove top tray and allow to cool.  Place lower tray on top shelf and continue to cook for another 5 minutes.  Cookies will harden as they cool
