Lemon,Cranberry and Poppy Seed Cake

  • 2 Whole Lemons, Ends cut off, then cut into quarters
  • 225 g Butter
  • 40 g Dried Cranberries.
  • 3 eggs
  • 120 g raw sugar
  • 30 g poppy seeds, (2 tblsp)
  • 300 g Self Raising Flour

Recipe's preparation

    Lemon, Cranberry and Poppy Seed Cake
  1. 1. Preheat oven to 170*C. Line a 20cm springform tin with baking paper. (Use the wet scrunched up method to line it,then let it dry in the oven for a few min while the oven preheats, take it out to cool)

     

    2. Place lemons and butter in TM bowl. Chop 8sec/Sp 8. Add cranberries and chop 2sec/Sp 5.

     

    3. Add remaining ingredients, mix 20sec/Counter-clockwise operation/Sp 4. Scrape down sides then mix 10-15sec/Counter-clockwise operation/Sp 4.5

     

    4. Pour into prepared cake tin and bake for 35-40 min, or until cooked when skewer is inserted and comes out clean.

     

    5. Remove from oven and let stand on a wire rack for 5min, then remove spring sides and allow to cool before removing from base.

Tip

I did get inspiration for this recipe from the 30 second whole orange cake, but you will see it is quite different.

You can use gluten free self raising flour instead. It will be a bit more dense though.

This is nice served with fresh thickened or whipped cream, or with lemon cream cheese frosting on top.

    Just made this recipe as 12 muffins, Delicious. I substituted 1 of the 3 eggs for a chia seed egg (20 gm chia seed soaked 30 gm water). Also added some white chocolate bits. Nice and moist and very tasty. Thank you for the recipe
