Janine's Jam Drop Biscuits - Thermie and Friends

Ingredients

Jam Drop Biscuits

  • 100 grams sugar
  • 200 grams butter (cubed)
  • 1 tsp vanilla essence
  • 200 grams plain flour
  • 50 grams cornflour
  • 50 grams dessicated coconut
  • raspberry jam (minimum)

Recipe's preparation

  1. Grease or line baking trays with baking paper
  2. Preheat oven to 160 degrees fanforced or 180 degrees conventional.
  3. Place sugar into mixing bowl and mill 20 sec/speed 9.
  4. Add butter and mix 2 min/37 C/speed 4.
  5. Add vanilla and mix 30 sec/speed 4.
  6. Add flour, cornflour and coconut and mix 30 sec/speed 4 to make a soft dough.
  7. Roll tablespoonfuls into balls and place on trays (leaving room for them to spread whilst cooking)
  8. Make an indent in the centre of each ball with your thumb and fill with raspberry jam.
  9. Bake 10 mins. Let rest on trays before transferring to rack to cool

    Delicious. Made them with GF flour. Filled with homemade lemon curd. They easily crumbled but then I reread the recipe and realised they have to cool on the tray. Delicious. Will certainly make these again

    Made these today in my TM6. Beautiful short bread style biscuit consistency. Better was a tad sticky but I didn't add more flour, dumping the mixture onto my baking mat lightly flowered was perfect solution.

    Cooking 7 Worked PERFECT with subsitution - gluten free plain & rice flour!

    Made a double batch of gluten free using raspberry and apricot jams. Have to admit - when I saw the amount of butter for a double batch I was a little OMG!!! but they've baked up golden and perfect and they are seriously the yummiest biscuits I've eaten. I used gluten free plain flour, and rice flour *(instead of the cornflour), and omitted the coconut... (instead of coconut - I added about 50g extra rice flour).

    10 mins in the oven and these are 100%. I'm impressed and don't the kids love 'em! Big Smile

    Great recipe I did a double batch and it made heaps like 55 biscuits!! Kids thought they were amazing with homemade plum jam and even better when I did a batch with Nutella. 10mins bake time was perfect!! Will definitely make these again nice light fluffy shortbread bikkies

    These were a hit in my house. Even non jam drop eaters loved them. I did and recommend staying in oven for up to 15-20mins not 10 as in recipe. They were not cooked at 10min. Will make a double batch next time, mine made 19 biscuits, and I popped plum jam in them.

    I might try a bit less sugar next time as I did them with sweet strawberry jam so it was a bit much. I cooked a little longer to brown them up a bit. Dough was sticky so Kids floured their hands before rolling into balls.

    Great recipe. Short dough, just the way I like it. I filled mine with strawberry chia jam, rhubarb and cherry jam, and Nutella. Kids ate all the Nutella ones first!
