Jam Drop Biscuits

Ingredients

0 portion(s)

  • 100 grams sugar
  • 200 grams butter (cubed)
  • 1&1/2 tsp vanilla essence
  • 200 grams plain flour
  • 50 grams cornflour
  • 50 grams dessicated coconut
  • raspberry jam (minimum)

Recipe's preparation

  1. Grease or line baking trays with baking paper

  2. Preheat oven to 160 degrees fanforced or 180 degrees conventional.

  3. Place sugar into mixing bowl and pulverise 20 sec/speed 9.

  4. Add butter and mix 2 min/37 C/speed 4.

  5. Add vanilla and mix 30 sec/speed 4.

  6. Add flour, cornflour and coconut and mix 30 sec/speed 4 to make a soft dough.

  7. Roll tablespoonfuls into balls and place on trays (leaving room for them to spread whilst cooking)

  8. Make an indent in the centre of each ball with your thumb and fill with raspberry jam.

  9. Bake 10 mins.  Let rest on trays before transferring to rack to cool

    Great recipe I did a double batch and it made heaps like 55 biscuits!! Kids thought they were amazing with homemade plum jam and even better when I did a batch with Nutella. 10mins bake time was perfect!! Will definitely make these again nice light fluffy shortbread bikkies

    These were a hit in my house. Even non jam drop eaters loved them. I did and recommend staying in oven for up to 15-20mins not 10 as in recipe. They were not cooked at 10min. Will make a double batch next time, mine made 19 biscuits, and I popped plum jam in them.

    I might try a bit less sugar next time as I did them with sweet strawberry jam so it was a bit much. I cooked a little longer to brown them up a bit. Dough was sticky so Kids floured their hands before rolling into balls.

    Great recipe. Short dough, just the way I like it. I filled mine with strawberry chia jam, rhubarb and cherry jam, and Nutella. Kids ate all the Nutella ones first!

    Great flavour and really short in texture, but mine spread quite a lot, I think because of the humidity in Brisbane. So perhaps will chill in the fridge before baking next time.

    1 alteration. Cooked for a little longer than advised - I like a little tan colour on my biscuits rather than just white.
    A+ great way to use up some jam you have - I used fig jam and it was bloody Awesome! next time I'll use up the Grape jam I have in the pantry :0) CoolLoveCool

    This recipe is quick & easy & biscuits are a nice consistency. I used jam on my half & my 3 year old grandson used chocolate buttons on his (that he declared the best 😁). I only had shredded coconut so put it in with the sugar to mill for the last 2 seconds. Perfect 👌. Definitely make these again - "blue" next time I've been told. 😄

    Jam drop biscuits - These jam drops are a winner! My dough was a bit sticky and difficult to handle so I also added an extra 50g flour and cooked for 180 degrees for 14 minutes. I used tablespoon sized balls and used my little finger rather than my thumb to create deep indents and got 29 jam drops. I'll be making these regularly! Five stars! Thanks for sharing!

    So yummy I baked for 25 min in my oven. biscuit is very short and would also make lovely short bread biscuits. I might try roll the biscuit mixture into logs on cling wrap and refrigerate for 10minutes cut up and bake next time!

    Mine turned out more like a shortbread biscuit. Consistency was not to sticky to handle. I pressed a choc melt on top of mine.  Iwould definitely make again.
