  • 235 grams of self raising flour
  • 20 grams of butter
  • 200 grams of Milk
  • 135 grams of mixed fruit or a 1/2 cup of raisins, 1/2 sultanas

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Line a loaf tin with baking paper to fit your air fryer or to cook in the oven
    Preheat oven to 160 deg fan forced
    Add butter and flour to the bowl, blend 5 seconds, speed 6
    Add the egg and milk and blend 4 seconds, speed 6
    Add the fruit and blend 4 seonds, reverse speed 4
    The batter will be thick -- scrape into your loaf pan level the top with your spatula

    In the air fryer it will take approx 25-30 mins 160 deg - oven 160deg fan forced approx 30-35mins
    A skewer to the middle should come out clean

    Icing - place a few tablespoons of icing sugar into a small bowl and a splash of milk - mix with a spoon and drizzle over the loaf when cool

    Served spread with butter

    The jubilee cake or loaf was created in 1936 for south australia's 100th jubilee year and the recipe* was published in the 1936 edition of the 'Green and gold cook book

    So worth making, so yummy. I didn’t add icing as hubby is diabetic, it has no added sugar just the sugar from the fruit
    Will definitely be making on a regular basis.
    Good memories of this from my childhood.
