Recipe's preparation

  1. Preheat the oven to 180 deg C. Line a muffin pan with 10 or 12 silicone or parchment paper muffin liners.
  2. In a large bowl, stir together the almond flour, erythritol (replacement sweetener), baking powder, and sea salt. Place MC on lid and blend for 20 sec on speed 4.
  3. Stir with a spatula.
  4. Add the coconut oil, almond milk, eggs, and vanilla extract to the bowl. Place MC on the lid. Blend for 15 seconds on speed 4.
  5. Scrape the sides and mix again for a further 20 seconds on speed 4. MC on.
  6. Fold in the blueberries. Counter-clockwise operationReverse speed 0.5 for 30 sec
  7. Distribute the batter evenly among the muffin cups. Bake for about 20-25 minutes, until the top is golden

Tip

The recipe calls for almond milk - you can use any milk you have in your fridge.

This recipe works with almond flour as well as almond meal.

I am using Monkfruit Erythritol granulated sweetener - the taste is very close to sugar.
