Kirls Cereal Slice

  • 300 grams icing sugar, can be milled in the Thermomix
  • 80 grams Cereal, 2 cups, eg Weetbix, Flakes, Muesli
  • 130 grams self-raising flour
  • 75 grams sugar
  • 50 grams dessicated coconut, plus 1 tbspn extra
  • 100 grams Sultanas or other dried fruit
  • 150 grams Butter, plus 10gm at room temperature
  • 1 egg
  • 3 tablespoon cocoa powder
  • 65 grams Milk

Recipe's preparation

  1. Preheat oven to 180/160 fan, line a 20 x 30cm slice tray.
  2. Mill 300gm sugar to icing sugar on Speed 10 for 1min. Set aside.
  3. Melt 150gm butter, 3mins, 50 degrees, Spd 3. Scrape sides and mix for 10secs, Spd 3, if required.
  4. Add cereal, flour, 75gm sugar, 50gm coconut, sultanas, egg, 1 tblspn cocoa to melted butter and mix 10secs, Spd 3, or until combined.
  5. Press mixture in lined tin and bake for 25min or until browned.
  6. Add icing sugar, 2 tblspn cocoa, milk and 10gm butter to dry bowl and mix 10sec, Spd 4, or until smooth.
  7. Pour icing over hot slice, sprinkle with 1 tblspn of coconut, and leave in tray to cool.

I have made this with bran flakes, Weetbix, gf cereal, rice bubbles. Use whatever cereal you want out of the pantry.
