  • 300 g Self Raising Flour
  • 80 g Raw caster sugar
  • 90 g Full Thickend Cream
  • 240 g milk or butter milk
  • zest of two lemons, no white pith
  • 75 g Butter

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Describe the preparation steps of your recipe

  2. Preheat oven to 200 degrees

    1. Vitamise white chocolate 4 sec speed 6 place in a seprate bowl

    2. Add sugar and the zest of a lemon  10 sec speed 8

    3. Add All muffin ingredients including chocolate into the bowl mix 20 sec speed 5

    4. spoon mixture into the muffin cases

    5. Bake for 15mins or until a skewer comes out clean.

    6. clean and wash bowl

    7. prepare syrup and pour on hot muffins when they come out of the oven

  4. 1. place sugar and lemon juice in a clean dry bowl  cook5mins/115/speed 2

    2. drizzle hot syrup over the hot muffins let cool

Tip

when pouring  the syrup onto the muffins make sure you do not pour to much, just enough to make the muffins moist. 

You can also put the syrup ingredience in the microwave for 60sec.

    I seem to have made an earlier version of this recipe so the quantity of a number of ingredients was a bit different. The muffins were very moist, very lemony and very nice - a really good texture and very tasty  I substitued some of the flour with LSA (80 grams).  Thank you for the recipe.
