Base

  • 200 grams almonds
  • 100 grams Butter, softened
  • 100 grams Caster sugar
  • 1 egg
  • 20 grams desiccated cococnut

Lemon Curd

  • 40 grams lemon juice, Aprox 1 lemon
  • 90 grams caster sugar
  • 80 grams Butter, cut into pieces
  • 2 eggs

Coconut Topping

  • 2 eggs
  • 100 grams caster sugar
  • 80 grams Shredded Cocnut
  • 80 grams desiccated cococnut
  • 50 grams almonds, whole

Recipe's preparation

    Base:
  1. Preheat oven 180 C or 160 C Fan Forced. Grease and line the base and sides of a 19 x 29cm slice pan with baking paper, allowing sides to overhang.

     

  2. Place Almonds into mixing bowl and mill 10 sec/speed 10

  3. Add Butter, sugar,egg & coconut and mix 10/speed 4.

     

  4. Spoon mixture into lined tray and smooth the surface with the back of a spoon.

    Bake in preheated oven for 15mins or until golden.

  5. Lemon Curd (recipe in the Basic Cook Book):
  6. Insert butterfly whisk. 

    Place lemon juice,caster sugar,butter and eggs into mixing bowl and cook 8min/80C/speed 3.

  7. Spread Lemon curd evenly over the prepared base.

     

  8. Coconut Topping:
  9. Place all ingredients into mixing bowl and mix 6sec/speed 5. 

  10. Sprinkle  topping over the Lemon curd.

  11. Bake in oven for 20 minutes or until golden.

  12. Set aside in pan to cool completely .

    Cut into size required

    What an amazing slice! Fabulous recipe, thank you. I made it dairy free by swapping butter for coconut oil in the base and Nuttelex in the curd. It was very popular with guests Smile.
