Lemon Ginger Cake

Cake

  • 2 lemons
  • 200 g sugar
  • 120 g Butter, cut into cubes
  • 1 egg
  • 330 g plain flour
  • 1 pinch salt
  • 2 tsp ground ginger
  • 210 g WARM milk
  • 1 tsp bicarbonate of soda
  • 2 tbsp golden syrup

Recipe's preparation

    Cake
  1. Preheat oven to 140 degrees C and grease & line 20 x 11cm loaf pan.

  2. Peel zest from lemons and place in thermomix bowl along with sugar.  Mill 10 seconds, speed 9.

  3. Add butter and mix a further 30 seconds speed 5.

  4. Place butterfly in the bowl and start blades rotating on 4.  Drop egg through hole in lid and mix 1 minute speed 4.  Remove butterfly.

     

  5. Combine bicarbonate of soda with warm milk. 

  6. Add flour, salt, ginger, golden syrup and mixed warm milk & bicarbonate of soda to mixing bowl, and combine on speed 5 for 20 seconds.

  7. Pour batter into prepared pan and bake 45 minutes-1 hour until cooked through
