Base
- 200 grams Tennis Biscuits (South African), Or any coconut butter biscuit
- 150 grams Butter
Filling
- 395 grams condensed milk, 1 tin
- 2 egg yolks
- juice of 1 lemon, freshly squeezed
Meringue topping
- 2 egg whites
- 250 grams castor sugar
- 1 level teaspoon vanilla essence

Crush biscuits in TM bowl on speed 5 in short 1 second speeds and check to ensure crumb mixture has lumps throughout to ensure crunchy texture in pie. Remove from bowl. Add butter and mix on speed 2, varoma temp till butter melted approx 2 minutes. Add crumb mix and mix on reverse till wll combined. Press into a 30cm round or square pie dish, or indiviual foil lined patty pans.. Mix filing ingredients in bowl for 3 seconds on speed 3 till well combined. Place filling mixture on top of base. Meticulously clean TM bowl by placing 1 litre boiling water and 30ml vinegar into bowl and mix on speed 9 for 1 minute. Dry TM bowl well. Place egg whites into bowl with butterfly on temp 37, speed 3 for 2 minutes. Add castor sugar gradulally till fluffly meringue eventuates. Place meriingue on top of filling. Bake for 15 mins on 170 degrees celcius on middle shelf of oven. Delicious served warm.
