Lemon Tart

  • 125 grams Butter
  • 200 grams caster sugar
  • 4 eggs
  • 2 egg yolks
  • 120 grams plain flour
  • 120 grams self-raising flour
  • 200 grams Pouring Cream
  • 200 grams lemon joice

Recipe's preparation

    Lemon Tart
  1. Prepare pastry

    Place butter, 120g caster sugar in TM bowl.  Mix for 10 secs/speed 7.

    Add 1 egg and mix for 10 secs/speed 7.

    Add sifted flours and mix 20 secs/speed 5.

    Tip out onto floured surface and form into a ball.  Wrap in cling film and refrigerate for 15 mis.

    Meanwhile make the lemon filling.

    Place all remaining ingredients in TM bowl and whisk for 15 secs/speed 7.

    Roll pastry out between sheets of baking paper until it fits the flan tin.  This patry is delicate, but it is easy to fill gaps with pieces of extra pastry once the tart has been trimmed.

    Prick all over with a fork, line with baking paper and fill with baking beans or pasta.

    Bake blind in medium oven for 10 mins.  Remove beans and bake for a further 10 mins.

    Lower oven temp to 160 degrees C.  Pour lemon filling into flan  and bake for 40 mins until it just wobbles slightly in the centre.  Chill in the fridge.

    You can decorate the tart with thin slices of lemon that have been simmered in 185 ml water and 150 g sugar for 40 mins.
