Grainfree Banana and Berry Mini Muffins

  • 160g almonds
  • 50g Coconut Flour
  • 50g Coconut sugar
  • 1/8th teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 Large ripe banana
  • 2 eggs
  • 1 teaspoon Vanilla Paste
  • 40g coconut oil
  • 80g Blueberries or raspberries

Recipe's preparation

  1. -Preheat oven to 170°C, line mini muffin tin with 24 patty cake liners.
    -Mill almonds and coconut flour, 10sec /sp 7
    -Add rest of dry ingredients, mix 5 sec/sp5
    -Add wet ingredients EXCEPT berries, mix 10sec/sp5
    -Divide mixture into patty cakes and press 2-3 berries per muffin.
    -Bake for 10-12 minutes until lightly golden.

Tip

*Variation- omit banana and substitute with 90g apple purée, add a drop or two of lemon essential oil.
