Luscious Chocolate Brownies

  • 200 grams Butter
  • 50 grams cocoa
  • 160 grams plain flour
  • 340 grams brown sugar
  • 2 eggs
  • 1 pinch salt
  • 50 grams hazelnuts

Recipe's preparation

    Luscious Chocolate Brownies
  1. Grease and line a 23cm lamington pan.

    Melt butter in the Thermomix bowl at 60° for 3 minutes on speed 1.

    Add cocoa, sugar, flour, eggs and salt and combine on speed 5 for approximately 10 seconds.

    Add nuts and mix on reverse for 10 seconds on speed 4.

    Pour mixture into pan and bake in a pre-heated moderate oven for approximately 20 minutes or until slice springs back.

    Cool in pan and cut when cold.  Sprinkle with icing sugar.

    Yum!

Tip

Use macadamia nuts as an alternative to hazelnuts!

    Made these yesterday after a last minute invite over to a friend’s place - thought hmm what can I bring that is chocolate without having chocolate in my fridge?! Brownies, made with cocoa!! Genius 😊 Also decreases sugar to 250g as others suggested and yes, definitely sweet enough. I blitzed up some walnuts first and set aside, instead of hazelnuts. Really yummy, thank you!!

    Amazing! Super moist and indulgent! Will be making these again. I reduced the sugar to 250g as suggested in other comments and omitted the hazelnuts. I also swapped the flour for Gluten Free flour...everyone devoured them and I even had rave reviews from my Mother in Law 😂

    These brownies are SOOOOooo delish - they are my go to, and wont ever consider trying another recipe now!

    My only tweek is to double the nuts. Ive used what ever nuts Ive had on hand (pistacio, walnuts, flaked almonds, hazelnuts) and its always been fabulous!

    I cook at 180 degrees for 15 minutes - which makes them a bit gooey inside - YUMMO!

    Delicious brownies!     I have reduced the sugar each time I've made these and find that 200 - 250g is the optimal sweetness for us.  Less than 200g changed the texture a bit too much.

    Yum! I just tried these as my son wants to take brownies to school for his class bake sale on Monday. I'm glad I baked a test batch as they will all be gone by tomorrow I think!     Just made these again (yum!) and took the sugar down to 220gm this time and added white choc chips and they were simply perfect- still sweet but without as many calories.

    Still seriously the best brownies I've ever made.....
