  • 1 mango
  • 3 medjool dates, soaked in boiling water for 1 hour (optional)
  • 2 eggs
  • 1 teaspoon coconut oil
  • 1/2 cup Raw Honey
  • 1 teaspoon apple cider vinegar
  • 1/2 lemon, juice and rind of
  • 1.5 cups Wholemeal Spelt or Buckwheat Flour
  • 1 teaspoon baking soda (bicarb)
  • 1 teaspoon cinnamon
  • 1 teaspoon Vanilla powder/ paste
  • 1/2 cup Nuts of choice
  • 1 cup Coconut, shredded
  • 1 mango, diced (fresh or frozen)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Wet Mixture
  1. Place the rind of 1/2 a lemon in mixing bowl and mill, 10 seconds/ speed 8. 

    Add the flesh of 1 Mango and Dates in mixing bowl and puree, 10 seconds/ speed 7.

    Add Eggs, Coconut Oil, Honey, Apple Cider Vinegar, and Lemon Juice & Rind and combine for 20 seconds/ speed 6.

  3. Place all dry ingredients to bowl (leaving out diced mango) and combine for 10 seconds/ speed 5.

    Add Wet Mixture and combine for 10-20 seconds/ speed 5.

    Add diced mango and combine for 10 seconds/ speed 3 Counter-clockwise operation

     

    Pour mixture into lined/ greased tin or muffin tray and bake for 30-40 minutes, or until cooked. Make sure not to overcook them as they will become dry.
