Mango Banana Cake

Ingredients

Cake Mixture

  • 250 grams Butter
  • 1/2 teaspoon bicarb soda
  • 1 teaspoon cinnamon
  • 330 grams Self Raising Flour
  • 150 grams brown sugar
  • 2 eggs
  • 1 teaspoon vanilla, I use Thermie made paste but you could use extract
  • 1-2 mangoes, flesh only
  • 2-3 bananas, ripe is good

Icing

  • 250 grams cream cheese
  • 2 tablespoon mango, approximately 1/4 of a mango the more you use the stronger the flavour
  • 250 grams icing sugar, I used raw sugar and made my own as an extra step

Recipe's preparation

    Cake
  1. Place butter and sugar in bowl. Mix Speed 5 45sec to 1min
  2. Scrape down side of bowl. Add butterfly and cream butter and sugar - Speed 4 for 2minutes
  3. Remove butterfly. Add eggs and beat speed 5 for 30 seconds
  4. Add vanilla, mango and banana. Mix approx 30 seconds speed 6
  5. Add all dry ingredients - flour, bicarb soda, cinnamon. Mix speed 6 for 20-30 seconds.
  6. Spoon mixture into 2 greased and lined 23cm sandwich tins OR into muffin pans
  7. Bake at 180degrees for 25-30 minutes
  8. Icing
  9. Blend raw sugar for 30seconds speed 9 (if making own icing sugar)
  10. Add cream cheese and mango blend 30 seconds speed 6
  11. Scrape down sides of bowls and repeat - blending 30seconds speed 6 or until smooth
  12. If making in two cake tins - sandwich the icing between the two cakes, as well as over the top. Alternatively ice the individual muffins

Tip

This can be made as a cake for a special occassion or dessert - sandwich the icing in between the cakes and on the top

It can also be made into muffins which are individually iced

    This was a huge hit on the weekend! Thanks.

    I used 100g of brown sugar, 2 mangoes & 1 banana and it turned out beautiful. Also took out the butterfly after step 3.

    For the icing I also added 100g of butter and half of a mango and it turned out like mango cream cheese frosting.

    Everybody loved it and agreed only 1 banana was needed as it would taste too much like banana not mango.

    As a general rule of thumb the butterfly must not be used above speed 4, so I removed it before proceeding to the next step as it needed you to mix at speed 5.

    I made these today for the toddlers at our mothers group and they were lovely....soft and light and delish!  I used 3 bananas and 1 large mango.  I also didn't have any bicarb so used 2 tsp baking soda and they rose perfectly.  Thanks for a fabulous recipe and a great way to use overripe fruit!  Oh...and not sure if I needed to, but I removed the butterfly after step 3  tmrc_emoticons.)

    After you cream the butter and sugar are you meant to remove the butterfly? Also mixture was quite dry so I added 120g milk.
