  • 125 grams Butter
  • 125 grams brown sugar
  • 1 teaspoons golden syrup
  • 600 grams dried fruit, mixed
  • 1 pinch salt
  • 1/2 tsp mixed spice
  • 1/2 tsp cinnamon
  • 1/4 teaspoons curry powder
  • 1/2 lemon, zest and juice
  • 35 grams raw almonds
  • 2 tablespoons brandy
  • 1 teaspoons cornflour
  • 125 grams plain flour
  • 1/2 tsp baking powder
  • 1/4 tsp bicarbonate of soda

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Add 35g raw almonds and chop 5 sec/speed 5.
  2. Add mixed fruit, butter, brown sugar, golden syrup, salt, mixed spice, cinnamon, curry powder, lemon zest and juice and brandy and boil 10 min/100°C/Counter-clockwise operation/speed Gentle stir setting .
  3. Once boiling, add cornflour and cook 1 min/100°C/Counter-clockwise operation/speed Gentle stir setting .
  4. When finished allow to cool in bowl close to room temp (approx 1 hour)
  5. Preheat oven to 150 degrees celcius and line a 12.5cm by 12.5cm wooden cake box with greaseproof paper.
  6. Spoon into the lined cake box
  7. Bake at 150 degrees celcius for 30 minutes. Then at 120 degrees celcius for 2 - 2 1/2 hours. Cool in the box.
