- 300 g carrot, peeled and chopped into chunks
- 200 g wholemeal flour
- 80 g raisins
- 80 g Grapeseed Oil
- 130 g Apple Puree or Sauce

- 2 teaspoons cinnamon
- 1/2 teaspoon salt

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Place carrot in TM mixing bowl and chop 5 Sec / SP5. Scrape down the sides.
Add in flour and raisins and mix "Counter-clockwise operation" 4 Sec / SP3.
Add to bowl all remaining ingredients and mix "Counter-clockwise operation" 10 Sec / SP3 or until well combined.
Spoon mixture into mini muffin pans and bake 20-25 min 180 degrees or until a screwer comes out clean.

Tip
I have made these in mini and in larger muffin sizes, just test with a screwer for when muffins are done.
Adjust sugar substitute to taste. I have also left it out completely and added a couple tablespoons of honey.
I have also used Wholemeal Self Raising flour and omitted the bi carb soda.
Raisins or sultana's both work well.
