- PREPARATION STEPS
1. Preheat oven to 180 degrees celsius.
2. Line a cake tin with baking paper. (16-20cms)
3. Add cake ingredients to bowl. Mix 15secs, sp 5 with MC on.
4. Remove 3/4c of cake mixture and put aside. Add rest to lined cake tin and press in to ensure edges are even. Having an uneven base adds to the end result!
5. Tip 2cups frozen mixed berries over base then dollop remainder of cake mixture over berries- use small blobs pressed slightly onto berries.
6. Sprinkle with coconut if desired.
7. Bake for approx 50 mins until golden.
Best served warm with icing sugar.
