Mums Walnut Slice

Ingredients

Slice Base

  • 50 grams dessicated coconut
  • 140 grams Self Raising Flour
  • 50 grams Rapadura Sugar
  • 125 grams Butter

Topping

  • 50 grams dessicated coconut
  • 2 eggs
  • 5 grams vanilla essence
  • 80 grams brown sugar
  • 60 grams walnuts

Recipe's preparation

    Mums Walnut Slice
  1. Line slice tray 19cm x 29cm

    Pre heat oven to 180 degrees

    The first step I do in a clean dry bowl is add my organic coconut flakes and mill to dessicated coconut 5-8 seconds speed 10.

    Place in a bowl

    Add Walnuts chop 3-5 seconds speed 4

    Place in a separate bowl wipe out the bowl (it doesn't have to be perfect)

    Melt butter 2 1/2 minutes 55 degrees speed 2

    Add Rapadura sugar, 50g Coconut and self raising flour mix 10 seconds speed 4

    Press mixture into a slice tray and bake in the oven for 15 minutes

     

  2. Topping
  3. Whilst the base is cooking prepare the topping no need to clean the bowl

    Add eggs and vanilla essence mix 5 seconds speed 4

    Add brown sugar, 50g coconut & chopped walnuts mix 10 seconds speed 4 Counter-clockwise operation

    Spread the topping over the cooked base and bake for 30-35 minutes. Allow to cool completely, lift the slice with the baking paper and cut in squares

Tip

I buy organic coconut flakes and mill my own dessicated coconut you do not have to do this.

Vanilla Essence measure 5g by filling the lid of your bottle

You can use refined sugar for the base I used rapadura and I will be trying rapadura instead of brown sugar for the topping next time I will post how it goes
