Ivy Melba’s Apricot Slice

  • 375 g dried apricots
  • 175 g Butter
  • 325 g self-raising flour
  • 200 g raw sugar
  • 70 g coconut desiccated
  • 2 level tbsp lemon juice
  • 200 g icing sugar, Add more if needed to create a thick icing
  • 20 g coconut desiccated, To finish sprinkle on top of icing

Recipe's preparation

    Slice
  1. Chop Apricots 20sec/Sp 5

    Cover with water & soak for 30 min. Drain in the steamer basket.
  2. Preheat oven 175deg C
  3. Place drained apricots into TM bowl with Butter, SR Flour, Raw Sugar & Dessicated Coconut and mix 6sec/Sp6 Counter-clockwise operation
    Scrape down bowl and mix 6sec/Sp3Counter-clockwise operation
  4. Pour into a slice tin, flatten with the back of a spoon or spatula and bake 175deg fan forced for 35-40min

    Alow to cool on a rack before icing
  5. Lemon Icing
  6. In a small bowl, mix lemon juice with icing sugar until smooth. Spread over slice, sprinkle with dessicated coconut and refrigerate until firm and cut into squares.

    Thanks to Facebook I found out this slice was on Recipe Community - it is so delicious thank you so much for the recipe 👏 only change I made was cut back the sugar to 150 - definitely a keeper 🙏
