NZ Chocolate Chip/Sante Biscuits

  • 3 tablespoons sweetened condensed milk
  • 1 teaspoon vanilla (extract)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Method
  1. Preheat oven to 180 degrees (fan forced). Prepare baking tray with baking paper.
  2. Place butter*, sugar, condensed milk and vanilla in bowl. Mix for 20 seconds/speed 4. *(If your butter is cold from the fridge, place in bowl prior to starting recipe and soften for 1 minute/50 degrees/speed 1)
  3. Add flour and baking powder. Mix 8 seconds/speed 4. Scrape down the bowl and repeat 8 seconds/speed 4.
  4. Add chocolate chips, mix 10 seconds/Counter-clockwise operation/speed 2.5.
  5. Use a teaspoon to make golf-ball sized balls and place on tray. Flatten each ball with a fork.
  6. Bake at 180C for approx 13 minutes or until golden.
    Note cooking time can depend on your oven.
    Biscuits will harden as they cool.
    Makes approxiately 25 biscuits.

Tip

This recipe is an all-time family favourite. It is adapated from the famous NZ Edmonds Cookbook.
It is super quick and easy to make. It could be altered by using white chocolate or adding other flavours such as coconut or saltanas.
When the biscuits first come out of the oven they are relatively soft and chewy and harden as they cool. They can be frozen if placed inside ziplock bags.
