Oat, Pecan & Chocolate Biscuits

  • 115 g Butter, Softened, cut in cubes
  • 115 g Soft brown sugar
  • 2 eggs
  • 4 tbsp Milk
  • 1 tsp vanilla essence
  • 200 g flour
  • 1 tsp baking powder
  • 1 pinches salt
  • 100 g rolled oats
  • 100 g Chocolate Drops
  • 110 g pecans, chopped in chunky pieces

Recipe's preparation

  1. Add butter and sugar and mix 10sec/spd 5 - scrape down sides
    Mix 10sec / spd 5 - scrape down sides
    Mix 10sec / spd 5 - scrape down sides
  2. 20 sec / spd 3.5 - add eggs 1 at a time, milk and vanilla essence
    scrape down sides
  3. Add flour, baking powder and salt
    Mix 7 sec / spd 3.5
  4. Add rolled oats, chocolate drops and pecans
    Mix 7 sec / spd 3.5
  5. Chill dough in fridge for 1hr
    Preheat oven to 180°C
    Wet hands and roll spoonfuls of dough and place on baking mat spaced apart.
    For rustic biscuits: place spoonfuls of dough on baking mat spaced apart
    Bake 10-12 mins until golden.
    Leave on tray to cool for 5 mins then transfer to a cooling rack.

Use white or dark chocolate drops
Pecans can be swapped with other nuts
