Old fashioned favourite - Jam and coconut slice

Ingredients

24 portion(s)

Base

  • 160 grams Butter
  • 225 grams plain flour
  • 70 grams icing sugar
  • 1 Jar Jam of choice

Coconut Topping

  • 2 eggs
  • 80 grams caster sugar
  • 160 grams desicated coconut
  • 6

Recipe's preparation

    Base
  1. Preheat oven to 180 degrees and line a lamington tin with baking paper.

    Place the flour, butter and sugar in TM bowl set dial toClosed lid and turbo pulse several times until combined (don't overmix). Remove from TM to Thermomat and lightly knead.  Press into lamington tin and refrigerate for 10 minutes - then bake for 15 mnutes or until golden.  Cool in tin then spread the jam evening over.

  2. Coconut Topping

    Without washing TM bowl place in eggs and sugar and mix for 15 second speed 5.  Add coconut and mix Counter-clockwise operation 5 seconds speed 3 or unitl combined.

    Spread the topping over the base evenly and bake for 20 minutes or until golden.  Cut into squares when cool.

    Such a lovely slice! Can also do half of slice raspberry jam and half lemon curd: 2 slices for the effort of one!! Lovely texture to topping when you mix half desiccated coconut and half shredded together

    Delicious shortbread base that looks like breadcrumbs but when pressed into pan bakes up beautifully. I used homemade raspberry jam and coated the base straight out of the oven then topped with the coconut. Family loved it so will be making this again. Thanks for the recipe

    I love this recipe, reminds me of my grandma's coconut jam slice. The shortbread is devine. i use half a jar of good quality jam 500gms eg 250gms and that is plenty. This slice freezers really well also. Thanks so much for the recipe

    Great recipe! I used cold butter out of the fridge and just needed to turbo a few more times until is just started to come together.  It was so easy to press in tin.  I didn't bother waiting for it to cool before adding jam and topping as I was in a rush. It's perfect!   tmrc_emoticons.)

    I am not sure what is happening as i have made this heaps of times the dough should come together like a shortbread dough that you can press into the tin.  Maybe add an egg and see if this helps.

    I was so excited about trying this but I've had the same problem as Melinda Hutchison! My base was like fine breadcrumbs when I tipped it on the Thermomat. I ended up tipping it back into the Thermie and trying to use the knead function but didn't make any difference. I tried adding more butter until I got the sort of consistency I was expecting but then ended up throwing it all out as it was too much butter! As much as I love butter, it just wasn't right for a slice base!! What sort of consistency should I be expecting? tmrc_emoticons.(

    I am not sure what went wrong with my base but it did not bind together at all, it was like dry breadcrumbs, have you got any suggestions to what went wrong??  I ended up adding a bit of water but the base doens't taste very nice. tmrc_emoticons.~
