Orange 8 Egg Cake

Ingredients

Batter

  • 1 orange, zest and juice (about 100g)
  • 250 g Rapadura Sugar
  • 250 g Butter, unsalted
  • 250 g S R Flour
  • 1/4 teaspoon salt
  • 8 eggs

Recipe's preparation

  1. Preheat oven to 180'C

  2. Mill Sugar and Orange rind 10 seconds on speed 9

  3. Add Butter and cream for 20 seconds on speed 4

  4. Turn TM onto speed 4.

    Add Eggs one at a time (through the whole in the lid) until combined.

    I took about 1 minute.

  5. Weigh the SR Flour onto the lid.

    Turn TM onto speed 4 and push the flour in slowly until it's all mixed in.

  6. Add juice and mix 10 seconds on speed 4.

  7. Pour into greased and floured cake tin and bake at least 45 minutes.

    Until it is golden and crunchy on the outside. It will still be moist and delicous on the inside.

Tip

I converted this from an old 'pound cake' recipe I found online when looking for something to use up eggs. I suspect it will work with many different citrus fruits. My orange had about 100g juice. I just squeezed it straight into the bowl using the spatula.
