Orange & Spice Carrot Cakes

  • 1 orange, grated zest & juice
  • 4 eggs
  • 250 ml vegetable oil, eg. canola
  • 300 g Soft brown sugar
  • 300 g SR flour
  • 2 tsp bicarb soda
  • 2 tsp cinnamon
  • 1 tsp Nutmeg
  • 1/2 tsp ginger
  • 3 carrots, peeled, coarsely grated


  • 100 g Butter, softened
  • 125 g cream cheese, softened
  • 1 tbsp orange juice
  • 230 g icing sugar

Recipe's preparation

  1. Preheat oven to 180 degC. 


    Mix orange rind, juice, eggs & oil in TM until combined. Add sifted dry ingredients and grated carrots. Mix until combined. Don't over mix. 


    Spoon mixture evenly between patty pans. Bake approx 20-25 minutes. Cool completely


    Make icing:

    Using butterfly in TM, cream butter, cream cheese & orange juice until light and fluffy. Gradually add icing sugar and mix until well combined. Spread icing on the top of the cupcakes.
