Muffins

  • 2 --- Carrots Large
  • 80 g raisins
  • 60 g walnuts
  • 150 g almond meal
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon G/F Baking Powder
  • pinch sea salt flakes
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cardamom
  • 3 large eggs, (at room temperature)
  • 125 g Butter
  • 125ml --- Maple syrup
  • dash vanilla extract

Icing

  • 225 g cream cheese, softened / room temperature
  • 125 g Butter
  • 60ml Maple syrup
  • dash vanilla extract

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Muffins
  1. Preheat Oven 180 degrees, line a 12-hole-muffin tray with patty pans

    Add carrot to bowl, grate 4-5 seconds/speed 5

    Add raisins, walnuts, almond meal, baking soda, baking powder, spices and salt. Mix 15 seconds/speed 4. Set aside.

    Add butter and melt butter 2 minutes/60 degrees/speed 4. Add eggs, maple syrup and vanilla. Mix 20 seconds/speed 6.

    Add carrot mixture to bowl and mix 20 seconds/reverse/speed 5. 

    Spoon batter into patty pans and bake 20-25 minutes. Skewer test.

    Set muffins aside to cool.

     

  2. Icing
  3. Add cream cheese, butter, maple syrup and vanilla to bowl. Mix 20 seconds/speed 6 or until smooth consistency. Repeat if necessary.

    When muffins are cool use piping bag with star tip to ice. Pipe icing onto centre of muffin and swirl in circular motion from inside out (similar to soft serve icecream!). 

    Place a walnut on top and sprinkle with cinnamon.

    Keep in fridge until ready to serve!

    I guess dairy is in that grey area of Paleo. Haven't tried yet with coconut oil but certainly let me know how you go!
