  • 160 grams Coconut Flour
  • 150 grams almond meal
  • 200 grams Almond milk
  • 2 eggs
  • 25 grams agave syrup
  • 80 grams macadamia oil
  • level teaspoon baking powder
  • 100 grams mixed berries
  • 200 grams Sugar free organic white chocolate

Recipe's preparation

    Paleo mixed berry & white chocolate muffins
  1. Pre-heat oven to 180 degrees.

    Place all ingredients except the mixed berries & white chocolate in the TM bowl & mix for 1 minute on speed 5.

    Add mixed berries & white chocolate (broken up into pieces) & mix for 30 sec on speed 3.

    Spoon mixture into muffin tin & bake in the oven for 35 minutes or until cooked through.

    Remove & cool

    Hi,

    I tried it and had the same issue as you. Added two extra eggs and a good splash of milk and it still wouldn't mix properly and the machine wouldn't mix the fruit and chocolate through.  I even tried mixing it on high speed but eventually gave up and mixed it through by hand. Having said that they did cook up ok.  I think next time I will halve the coconut flour as it soaks up liquid really fast.

    would be great if the recipe owner could correct the measurements though. tmrc_emoticons.)

    HI I was just wondering if you had any issues making these muffins.  We tried and had an epic fail.  It was like there was not enough moisture in the mix and we even tried adding extra milk to the mix and still couldn't get it to work it just became like wet flour tmrc_emoticons.~  We followed the recipe but just couldn't get it to work.  What could we have done wrong?

    Look forward to someone having an answer so that we can try these muffins that sound DELICIOUS  tmrc_emoticons.)
