- 30 grams Butter
- 100 grams sugar
- 1/2 tsp salt
- 1 egg
- 250 grams COLD cooked pumpkin
- 480 grams plain flour
- 4 tsp baking powder
Preheat Oven to 230'C
Beat together butter, sugar, salt - Speed 5 for 5 secs
Scrape down side and repeat for 15 secs on Speed 5, again scrape down sides.
Add egg and mix Speed 4 for 4 secs
Add COLD cooked pumpkin and mix Speed 4 for 4 secs
Add flour and baking powder, mix Speed 5 for 5 secs. Set lid to 'Closed Lid', Intverval Speed for approx 8 secs or until flour is just combined.
Shape dough into rectangle shape about 2inches high, dust with flour, use MC to cut scone shapes.
Place scones close together on baking tray and bake for 15-20 mins.
