Scone Mixture

  • 30 grams Butter
  • 100 grams sugar
  • 1/2 tsp salt
  • 1 egg
  • 250 grams COLD cooked pumpkin
  • 480 grams plain flour
  • 4 tsp baking powder

Recipe's preparation

    Pumpkin Scones
  1. Preheat Oven to 230'C 

    Beat together butter, sugar, salt - Speed 5 for 5 secs

    Scrape down side and repeat for 15 secs on Speed 5, again scrape down sides.

    Add egg and mix Speed 4 for 4 secs

    Add COLD cooked pumpkin and mix Speed 4 for 4 secs

    Add flour and baking powder, mix Speed 5 for 5 secs. Set lid to 'Closed Lid'Closed lid, Intverval SpeedDough mode for approx 8 secs or until flour is just combined.

    Shape dough into rectangle shape about 2inches high, dust with flour, use MC to cut scone shapes.

    Place scones close together on baking tray and bake for 15-20 mins.

    The scones were very tasty and had a lovely texture .

    TIP

    My dough was very stiff, so I had to add another egg.

    I added 5 spice mix and sunflower seeds.

    The recipe is way too sweet. I will use about 60 g sugar next time .

    Easy. Tasty. I didn't have an egg so substituted it with 1 tbsp of chia seeds and 3 tbsp of water, which sat for 10 minutes.
