Quick & Easy Banana Date Loaf

Ingredients

1 portion(s)

Cake

  • 130 g pitted dates
  • 2 Large Overripe Bananas
  • 120 g unsalted butter
  • 190 g SR flour
  • 1/4 teaspoon baking soda
  • 2 teaspoon vanilla essence
  • 50 g Milk
  • 2 eggs

Recipe's preparation

    Now let's get on to it...
  1.  

    Prep :

    a) Oven 160deg

    b) Crush baking paper into ball, and then open up and line into loaf tin. This is a truly lazy way ..oops, rustic way of doing it, if you're not too fussed about how the cake turns out.

     

    1. Bowl is dry n clean, when you pour in dates. Blitz dates 10 sec, Speed 10

    2. Throw in everything else, weighing in whatever needs to be weighed as you go. The sequence of ingredients does not matter.

    3. Mix 25seconds, Speed 5.

    4. Scrape down whatever's at the sides

    5. Final mix, 5-10 seconds, Speed 5.

    6. Pour everything into the loaf tin and chuck loaf tin into oven.

     

    Within an hour, really.. an hour, stick a skewer to check if cake loaf is done. How? Skewer comes out clean. No bits stuck on it.

     

    Enjoy with some tea/coffee.

Tip

Washing your bowl after you are done.

1) Fill your bowl up with water, enough to cover blades.

2) 3 min, 60deg, speed 3.

3) once completed, turbo it, and rinse it out.

    Or add 1/2 cup walnuts and make into 10 - cook for 25 mins. Pipe cream cheese frosting on top.
    next time I'll add 1 tsp cinnamon. They also freeze and thaw really well.

    This is the best loaf recipe I have ever tried and I love the fact that it has no sugar. I made it gluten free and I used two banana's from the freezer instead of fresh ones and it worked a treat.

    This turned out nicely with wholemeal SR flour. It did need some extra mixing and then came out a little flat, maybe I overdid it, but it was still really yummy. Very sweet given the lack of processed sugar. Thanks!

    I make this at least once a week I love it so much! I try to make it a bit healthier by adding only 80-90g dates and it's still very sweet. Also use half the butter and half coconut oil. Lastly, I substitute the white SR flour for wholemeal SR flour. still turns out so moist and delicious! tmrc_emoticons.)

    I use to have this issue alot. I've found if I turn the oven down slightly, cover the top of the loaf tin with alfoil and cook on the bottom of the oven for a longer time it helps. I just take the foil off for a couple of minutes when it's nearly done so the top of loaf colours. Good luck.

    I think it's just me because EVERY banana loaf I've made in my thermie has come out uncooked and wet! I followed the instructions to a T and baked for over 1hr 15 mins and still it didn't work. The outside looks great but mush on the inside... PLEASE HELP!!

    If I could give this recipe an extra star I would! Absolutely perfect. I made it and I still can't believe there is no added sugar. i used 195g dates (using up a very old bag) and slipped with the milk (95g instead of 50) but it didn't matter. Passed the "licking the bowl test" as well as the warm from the oven test. Absolutely delicious, thank you so much for sharing.

    So delicious without the sugar! Made a 1 1/2 of the recipe using a larger loaf tin. Baked for 1h 10 mins, 160 deg C fan-forced & mostly done but the bottom of loaf was cooked but denser & moist - wasn't more of a cake-texture like the rest, so wondered if I should have kept it in there longer. Used pitted dried dates too. Will definitely make again! Ideal for lunch boxes & morning tea. Well received as part of brunch. Loved the humour in the recipe Big Smile  Thanks for posting!!
