Raspberry and Vanilla bean Cheesecake

Coulis

  • 300 grams raspberries
  • 30 grams white sugar

Base

  • 100 grams Butter
  • 200 grams Marie biscuits or sweet plain biscuits

Filling

  • 250 grams cream cheese
  • 395 grams sweetend condensed milk
  • 250 grams thickened cream
  • 80 grams Lemon Juice.
  • 2 teaspoons Gelatine powder
  • 1 tablespoon Vanilla Bean Paste

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    To make coulis:
  1. Place ingredients in TM bowl and cook 5 minutes on 90 degrees speed 3. Place in a container and refridgerate. Clean Bowl.

  2. To make base:
  3. Place butter in bowl and melt 3 minutes on 90 degrees speed 2.

    Add biscuits and crush 5 seconds speed 9. 

    Press into well lined springform pan and set aside. Clean Bowl.

  4. To make filling:
  5. Place cream cheese, cream, sweetened condensed milk, lemon juice and vanilla paste into bowl and mix for 15 seconds speed 4.

    Scrape down sides of bowl and sprinkle gelatine over contents. Blend for 15 seconds speed 4 until thick and smooth.

    Top biscuit base with filling and smooth off.

    Set in the fridge overnight or for a minimum 4 hours.

    When set carefully remove from spring form pan, decorate with raspberrys and swirl over cold coulis.

Tip

Change the fruit with the seasons and add more or less freshly squeezed lemon juice to taste.

    This was very easy, very quick to set and absolutely delicious. I used strawberries for the trim and coulis. My springform tin was too big so the filling was not very deep - no one cared, it tasted fantastic.
