Raspberry & Choc Chip Muffins - Low FODMAP

Ingredients

Muffins

  • 1 Ripe banana
  • 1 potato, boiled
  • 60 grams unsalted butter
  • 1 teaspoon almond essence
  • 2 eggs
  • 100 grams brown sugar
  • 70 grams white rice (or white rice flour)
  • 70 grams brown rice (or brown rice flour)
  • 30 grams tapioca flour
  • 45 grams potato starh
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon bicarb soda
  • pinch salt
  • 3/4 cup dark choc bits (I forgot to weigh this)
  • 70 grams raspberries (fresh or frozen

Recipe's preparation

  1. Prepare potato either on stove while continuing with recipe, or beforehand in Thermomix.

     

  2. Preheat oven to 180 degrees celsius.  Prepare muffin tin.

     

  3. Mill rice (if using rice rather than flour).  1 minute/speed 9.  Set aside. 

     

  4. Melt butter, 2 minutes/100 degrees/speed 1

     

  5. Add all remaining ingredients except for chocolate and berries.  Mix 10 seconds/speed 5.  

     

  6. Add chocolate pieces and berries.  Scrape down sides and mix, 5 seconds/Counter-clockwise operation speed 5.  If sufficiently mixed place into tin and bake 20 minutes.

     

  7. Allow to cool before eating.  Best eaten fresh.
