Raspberry & Lemon Coconut Slice

  • 125 g Butter, softened
  • 1/2 cup --- caster sugar
  • 2 level tsp grated lemon zest
  • 1cup plain flour
  • 1/2 cup self-raising flour
  • 1 egg, lightly beaten
  • 1 cup raspberry jam
  • 125 g raspberries, halved

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Base
  1. Preheat oven on CircoTherm Intensive and place the wire rack on shelf position
    Grease and line a 20 cm x 30 cm lamington pan.
  2. Place butter and sugar in bowl 2min speed 4 until smooth and creamy.
    3. Add egg 30 sec speed 4.
    4. Sift flours add to bowl speed Gentle stir setting 1 min or until combined.
    5. Spread over prepared tin.
    6. Cover base with jam and place raspberries on top.
  3. Topping
  4. 1. Combine topping ingredients in bowl and mix 30sec speed 6 Counter-clockwise operation
    2. Spread evenly over base, pressing gently with the back of a spoon.
    3. Bake for 35 to 40 minutes or until golden and cooked.
    4. Allow to cool before cutting.
