Raspberry Sugar Buns

Ingredients

24 piece(s)

Mixture

  • 110 grams Butter
  • 300 grams flour
  • 100 grams sugar
  • 2 tsp baking powder
  • 100 grams sultanas
  • 2 Eggs.
  • milk to make 260 grams of liquid
  • raspberry for tops
  • sugar to sprinkle

Recipe's preparation

  1. Preheat the oven to 180 degrees C

  2. Weigh 2 eggs and milk for a combined weight of 260 grams. Mix on speed 5 for 5 seconds. Set aside

  3. Place in Thermomix  cubed butter, flour, sugar, and baking powder.. Mix 7seconds speed 4

  4. Add sultanas and Counter-clockwise operation speed 4 for 4 seconds

  5. Add liquid and knead 20-  30 seconds on Dough mode to form a sticky dough

  6. Place dessertspoon mounds onto tray.  Make an indent with a wet finger

  7. Spoon a small tsp of raspberry jam into middle

  8. Sprinkle with sugar and bake for 15- 20 minutes

Tip

You can  make many variations on this  - try cranberries or currants instead of sultanas.  Replace raspberry jam with apricot, or strawberry or  even fig.

    Sorry to take so long to reply I have just been looking at my site and seen the question, The liquid is a cup - so that weighs 250 - 260  g. The eggs and the milk need to weigh 260 - Thanks I will change the recipe instructions.

    I made these with 260g liquid but they don't look like the picture.

    I've made these a few times and they have been great. Tonight they did not turn out well, can't remember if I used self raising flour last time
