Ingredients

Raspberry & White Choc Muffins

  • 160 g self raising flour
  • 150 g plain flour
  • 190 milk
  • 150 sugar
  • 2 eggs
  • 70 g light olive oil
  • 1/2 tsp baking powder
  • 100 g raspberries
  • 200 g white chocolate, buttons
  • Icing sugar for dusting

Recipe's preparation

  1. Preheat oven to 180.

    Place flours, milk, sugar, eggs, oil and baking powder in TM bowl and mix 40 sec / speed 4-5.

    Add raspberries and chocolate and mix 20 sec / speed 2 with the aid of TM spatula.

    Insert patty cases in a muffin pan. Spoon mixture inside each case, then bake in oven for 20 minutes or until a skewer comes out clean when inserted in middle of muffin.

    Remove from oven and allow to cool on a wire rack.

    Once cooled, dust with icing sugar.

  • If you have a fan forced oven

    If you have a fan forced oven make sure you lower the temperature at least 10 degrees.  Fabulous recipe though, thanks. Big Smile
